
Thai Chickpea Pumpkin Curry
My easy Thai Chickpea Pumpkin Curry is the perfect one-pot meal that's full of spicy and savory flavors from chickpeas, coconut milk, and pumpkin. It's ready in under an hour and can easily be prepared the day before for a quick midnight meal!
What you need

cup fresh spinach

fl oz cooking oil

clove garlic clove

tsp fine sea salt

jalapeno

cup cauliflower

cup red pepper

tsp ground cumin

cup jasmine rice

cup yellow onion

can pumpkin puree

can chickpea

tbsp lime juice

tbsp thai red curry paste

tsp smoked paprika

can fire roasted tomatoes

can lite coconut milk
Instructions
0 Sauté the onion, garlic and peppers in oil/broth until the onion is soft. About 5 minutes. 1 Stir in the tomatoes. Cover and let cook about 3-4 minutes. 2 Add the curry paste, salt, cumin and smoked paprika. Saute about 1 minute. 3 Add in the cauliflower, coconut milk and pumpkin. Simmer uncovered for 10-15 minutes. 4 Add chickpeas, spinach and lime juice and cook until spinach is wilted. 5 Serve over rice and cilantro garnish if preferred.View original recipe
